If you build it in chocolate, they will come

Latex gloves and a spray gun have taken Santiago Cuyugan from Bibelot Patisserie in South Melbourne to Sydney Showground and then back to Brunswick Victoria as the winner of the Chocolate Showpiece Class at the Callebaut Sydney Royal Chocolate Show.

Santiago’s steady hand and eye for design delivered the perfect round trip for the chocolatier from the southern state – his prize includes a Masterclass at Brunswick’s Savour Chocolate & Patisserie School. With an incredible chocolate showpiece representing Persephone, the Greek Goddess of Spring, Santiago created an incredibly intricate pomegranate with fine leaves and a reclining goddess in white – all made from chocolate and constructed in front of a live audience.

Moving to Melbourne from Vancouver Santiago is no stranger to travelling for his chocolate art; he has trained in Hong Kong, visited a cocoa plantation in Ghana, and competed against pastry chefs and chocolatiers from as far as Russia and the US.

Thrilled to welcome the Savour Patisserie of the Year Santiago to the competition, Chair of Judges, Jodie Van Der Velden described the Showpiece construction as breathtaking and was pleased by the high quality across the competition as a whole.

Santiago’s chocolates and classic French patisserie creations can be enjoyed at Bibelot Patisserie in South Melbourne, an opulent destination with bonbons, petit gateaux, gelato, biscuits, macarons and more.
