Forget your usual chocolate flavours of caramel, mint and even cherry. This year at the 2018 Callebaut Sydney Royal Chocolate Show, the judges saw an array of combinations capable of making many a chocoholic’s dreams come true.
Seatonfire Chilli Chocolate and Ms Peacock Fine Chocolates were two of the exhibitors definitely pushing the boundaries when it comes to traditional chocolate flavours. Ms Peacock Fine Chocolates are bringing chocolate fantasies to life with their Pleasure bar combining honey peanut caramel, peanut butter ganache, raspberry and peanut crunch. Perhaps the Desire bar is more to your liking, filled with orange & vanilla bean, almond crunch and salted caramel in one gloriously satisfying bar. These deliciously decadent chocolate bars both received medals with Desire taking home silver and Pleasure taking home a coveted Sydney Royal Gold Medal.
Seatonfire Chilli Chocolate speaks for itself and it is absolutely not for the faint of heart, adding a little fire to traditional chocolate flavours with chocolates including Dragon Breath and their Sydney Royal entry Salted Caramel Dark Chilli Chocolate.
These new flavour combinations prove that exhibitors are willing to push the boundaries to make their chocolate stand out to Sydney Royal Judges.
“We saw some very interesting exhibits, with innovative flavour combinations, finishing techniques and textural components”, said Sydney Royal Chocolate Chair of Judges, Jodie Van De Velden.
“We were extremely pleased with the high quality of exhibits entered, as this has been clearly reflected in the number of medals awarded.”
Champions from the Callebaut Sydney Royal Chocolate Show will be announced on Friday 21 September at the Sydney Royal Taste of Excellence Awards with results available on the RAS website on the 22 September 2018.
